Anne Simmons of Chocolat Lily is a co-founder of Cotton Tree Chocolate, a bean-to-bar chocolate-making company in Belize. Cotton Tree Chocolate employs local women who buy local beans, and works with local farmers towards environmental, economic, and social sustainability, exclusively using cocoa beans grown by neighbors from the Mayan villages surrounding Cotton Tree Lodge in the Toledo District of Belize.

More than just single origin, each batch of Cotton Tree Chocolate starts with cocoa beans from a single day's harvest from a single farmer. The beans are fair-trade certified. The employees are local residents. The cacao is sourced organically.
